Baked Cod with Summer Vegetables

    Bake in the Kamado Joe for about 30 minutes or until the fish has reached 140-145°F degrees internal temperature.

    Heat your Kamado Joe to 400°F degrees. This can be direct or indirect.

    Slice the cod into smaller portions around 2-3 inches or whatever you prefer and season with the *Garlic & Herb seasoning on both sides. Set aside. Note: The Garlic & Herb seasoning can be replaced with a mixture of salt, black pepper, garlic powder, onion powder, basil, and thyme.

    Line the bottom of a cast iron skillet or pan with parchment paper and spread the zucchini, yellow squash, tomatoes, and garlic around the pan. The paper will prevent sticking.

    Drizzle the vegetables with olive oil and season with Garlic & Herb seasoning.

    Sprinkle the Parmesan cheese all over.

  7. 06

    Place the pieces of fish in the center of the dish without touching so they cook on all sides.

    Add parsley at the end as a garnish and serve immediately.
